Heritage Apple Crackling cider by C.E.Petch
This dry sparkling cider has been carefully crafted from a blend of old-time heritage apple varieties. Light and fruity with fresh apple notes.

Golden Russet, Fameuse, Tolman Sweet, Northern Spy
Production Method
At Petch Orchards, we proudly preserve and cultivate numerous heritage apple varieties that are rarely found today yet display wonderfully unique sets of eating and fermenting qualities. A selection of these varieties are hand-picked and soon pressed before fermenting over a period of around two months. After ageing several months on its lees, this cider is then filtered and bottled for your enjoyment!

Cidre Doux by C.E.Petch
Our Cidre Doux pays homage to the beautiful region in which it was crafted. Its concentrated flavor profile is the product of Quebec's frigid winter temperatures, which has created a sweet, yet well balanced cider with notes of ripe apple and tropical fruits.

Production Method
Freshly pressed juice is put outside to be frozen solid by our intensely cold Quebec winters. Come the first spring thaw, we rack the concentrate that is full of flavor and sugar, and then proceed to blend then ferment the cider over a period of several months.

Our Cidre Doux is a sweet cider that goes great as an aperitif or with dessert.

Ice Cider by C.E.Petch
Our Ice Cider is the result of an exceptional terroir, harsh Quebec winters, and the expertise of true cider lovers. Made solely from apples matured and frozen on the tree, this full-bodied ice cider is rich in notes of homemade applesauce, caramel, and baked apple.

Gala, Fuji, Cortland, McIntosh, Honeycrisp
Production Method
The production of this quality ice cider begins in January/February, when apples that have frozen on the tree are picked and pressed for their highly concentrated and delightfully sweet nectar. The nectar is then fermented ever so carefully over a period several months. When the desired balance between sweetness and acidity is obtained, we cease fermentation and proceed to ageing the cider for another several months before bottling.

Serve chilled between 10°C and 12°C
Pairs wonderfully with cheddar cheese and dark chocolate and can be enjoyed as a dessert or as an aperitif.

Fire & Ice by C.E.Petch
Our Fire & Ice Ice Cider is made from a slightly modified variety base to our original Ice Cider which is then aged in Bourbon oak casks for at least twelves months. This unique ageing process harmonizes the delectable notes of apple, with the bold notes of butterscotch and toasted vanilla. A truly exquisite level of ice cider, and as always is made solely from apples matured and frozen on the tree.

Production Method
Cryo-extraction - The production of this quality ice cider begins in January/February, when apples that have frozen on the tree are picked and slowly squeezed frozen for their highly concentrated and delightfully sweet nectar. The nectar is then fermented ever so carefully over a period several months. When the desired balance between sweetness and acidity is obtained, we cease fermentation and continue to age in ex-Bourbon oak barrels for at least twelve months.

To be enjoyed as a dessert or digestive. Pairs wonderfully with fine cheeses and dark chocolate.

Yellow Label Dry Hop by C.E.Petch
Halfway between a cider and a blonde beer, our Dry Hop is a uniquely refreshing alternative. Crisp with a dry finish, and with plenty of lemon, citrus, and floral aromas. Produced with Cascade and Centennial Quebec hops.

Production Method
A dry sparkling cider that has been macerated in hops post-fermentation to bring out a whole difference style or taste and aroma. After ageing several months on its lees, this cider is then filtered and bottled for your enjoyment!

To be enjoyed with with family and friends. Pairs very well with grilled chicken, seafood, and Asian dishes.

ILLICIT Moonshine - Apple Pie
ILLICIT is a prohibition style secret recipe that dates back to the 1920's in the small border town of Hemmingford. At the time, Hemmingford was equally renowned for its bountiful apple orchards as well as being infamously known as a smuggling hub for contraband liquor. ILLICIT Apple Pie has the rich complex flavor of a freshly baked apple pie, and finishes slightly sweet and smooth on the palate.
Production Method
The perfect blend of cider, high-proof Moonshine, fresh pressed apple juice, and an array of spices is matured for several months before being cold-filtered and then bottled.
Serving Suggestions
Can be enjoyed neat, on the rocks, or in a variety of cocktail creations.

To create POMONA, our orchard fresh apple juice is cold filtered five times before being carbonated under pressure, pasteurized, and bottled. Made of 100% natural apple juice- no added preservatives!
